Superfood Birdless Wings

Ingredients: 1/2 bag Butler Soy Curls 1 Jug No Chicken Veggie Broth 1/4 C golden Flax meal 1/4 C whole grain cornmeal 1/4 C poultry seasoning 1/4 C nutritional yeast Season to taste Instructions:

  1. Pour out whole bag of soy curls. and select the larger pieces (1” minimum)

  2. Add these larger pieces to a medium bowl with a lid and add the veggie broth to cover the Soy Curls, secure lid, shake.

  3. Soak for 30 minutes to overnight in the fridge. (The warmer the broth, the shorter the soak-time). Soak until they are soft and tender.

  4. Mix all dry ingredients in an XL mixing bowl and season to taste.

  5. Pour the soaked Soy Curls through a strainer with a bowl below to reserve the liquid. Use liquid to soak a second batch or add to a soup.

  6. Carefully place the soy curls in the breading ingredients in one layer and toss to coat. Repeat until cooking surface is full. Place in air fryer, on rack of toaster oven, or on sheet pan lined with parchment paper.

  7. Bake in convection toaster oven on 400 for 7 minutes, or Air Fryer at 375 for 10 minutes (shake at 5 min.), or regular oven at 400 for 7-10 minutes (shake at 4 min.)

  8. Toss or dip in your favorite sauce.

Makes about 75 small nuggets, approximately equivalent to 3/4 lb of chicken. Serves 2 as an entree or 4+ as an appetizer.
