Soykey For The Holidays!



Try this healthy replacement for turkey with all the delicious, meaty flavor you crave without the dietary cholesterol, saturated fat, and sodium found in turkey meat. We recently updated the recipe to add even more meaty flavor. Both recipes are below, decide which one looks best for your family's celebration, or try them both!


Soykey 2.0:

Gluten-Free, No Added Oil, WFPB, Vegan, Low Sodium, and High Fiber.

Time: 15 minutes

Yield: 1.5 lbs of turkey replacement


1. Pour the following into a blender:

3 Cups Mushroom Broth (sub low sodium if you wish)

1 TBSP Poultry Seasoning

1 TBSP Salt-Free Seasoning

1 Packet Miso Cup Soup Mix (sub low sodium if you wish)

2. Blend on high for 1 minute

3. Pour into a medium pot over medium-high heat.

4. Bring to a boil.

5. Add:

1 Package of Soy Curls


6. Return to boil

7. Cover and reduce heat to medium.

8. Cook 7-10 minutes stirring occasionally until the liquid has absorbed.

9. Reduce heat to low and keep covered for moist and juicy Soykey.

10. Serve! (serves 3-5)

(Optionally, If you prefer a dryer, more browned texture:) once cooked, place on a sheet pan covered in parchment paper and bake at 400 Degrees until browned.






Compared to Turkey meat, Soykey 2.0 is:

  • Less Calories

  • Zero Cholesterol

  • Good Source of Fiber

  • Less Protein (which is healthier contrary to popular belief)

  • Higher in Vitamin A, C, Calcium, and Iron


The Original Soykey:


Gluten-Free, No Added Oil, WFPB, Vegan, Low Sodium, and High Fiber.

1-8 oz package Butler Soy Curls

1-32oz carton of low sodium vegetable broth

1 heaping teaspoon roughly ground dried sage (or 1 Tablespoon fresh minced)

1 heaping Tablespoon Simply Organic Turkey Seasoning (or other poultry seasoning)

1 teaspoon sea salt (if desired)

Black Pepper to taste

Garnish with fresh chopped Italian parsley

Optional: Garbanzo bean flour for gravy

Instructions:

  1. Empty Soy Curls into a large resealable container.

  2. add vegetable broth.

  3. Sprinkle the spices.

  4. Cover with lid and shake.

  5. Allow to soak for 10 minutes- 10 hours! (you guessed it, the longer, the more flavorful)

  6. Drain Soy curls, reserve liquid.

SAUTE:

  • Heat an extra-large saute pan to Medium-high.

  • Add the Soykey to the pan stirring often until browned, approximately 6-8 minutes.

  • Transfer Soykey to a serving dish with a lid.

  • Garnish with freshly chopped parsley immediately before serving.

BAKE:

  • Preheat Oven to 400 Degrees.

  • Line sheetpan with parchment paper (1 pan per recipe).

  • Bake for 25 minutes, flipping at 12 minutes.

  • Garnish with freshly chopped parsley immediately before serving.

Soykey Gravy:

  1. Using the same pan, pour in reserved soaking liquid.

  2. Heat on medium low until simmering.

  3. Whisk in a heaping 1/4 Cup of garbanzo bean flour until smooth.

  4. Reduce to low and cover until served.
